Whip It Good: The Secret to Perfectly Creamed Butter & Sugar
Air is the magic ingredient here! When we cream butter and sugar together, we’re not just mixing—we’re incorporating air into the mix. As the sugar crystals rub against the butter, they create tiny pockets that trap air, making the mixture light and fluffy.
To get this right, your ingredients need to be at room temperature. If your butter is too soft, the sugar just melts into it, resulting in dense and chewy cookies. By the end of mixing, the butter and sugar should blend seamlessly, and the mix should lighten in color. A stand mixer will take about 4 to 5 minutes, but doing it by hand will take longer (and give you a workout!). You want to increase the volume by about half, and then you’re good to move on!

And here’s a pro tip: always start with a cool or room-temperature baking sheet. Placing dough on a hot sheet can lead to uneven baking and spreading.
Use a Cookie Scoop or Kitchen Scale for Even Cookies
Uniformity is key! To get that perfect batch, use a cookie scoop or kitchen scale to ensure your cookies are all the same size. This way, they’ll bake evenly, and you won’t end up with some cookies underdone while others are overbaked.
Don’t Over-Bake Your Cookies!
Trust your instincts and keep an eye on those cookies. Oven temperatures can vary, so baking times might differ. Cookies are done when the edges are set and lightly browned. If you like them soft, the centers should look slightly underbaked. For a crispier bite, let them bake a bit longer until the centers are fully set. Remember, cookies continue to bake on the sheet after you take them out,
so give them a few minutes to cool before you dig in!
